Summertime Cucumber Salsa

I wanted to share this delightful recipe, given to me by my co-worker, fellow scrapbooker and friend, Donna M.


Cucumber Salsa

3 large tomatoes, seeded and diced
1 cucumber, seeded and diced
3 green onions
3 cloves of garlic (I added five or six)
2 tbsp olive oil
2 tbsp vinegar
1/2 tsp salt
1/4 tsp cayenne (I used red pepper flakes)

Mix gently and chill in fridge for a few hours.  Serve with nacho chips.

You could literally just eat this as soon as you make it - it's that good.  However, I like my salsa cold and chilling it allows the flavours to meld and complement each other.
